Restaurant Pankratz, Mainz 2023
In November I visited the Pankratz restaurant together with Ramon Haindl. When you enter the place it smells of freshly baked bread, a wide variety of pickled vegetables and mozzarella is homemade by them.The good news: everything ends up on the table in the restaurant. The Pankratiushof works closely with the producers of the products, such as the salmon trout which comes from the nearby Wisper Valley. On that day we were able to watch how the salmon trout is prepared and I was able to capture a few stills of this beautiful place.
